Mayo Clinic Food Service is serving up flavor, education during March 

Mayo Clinic Food Service is offering special meals, information and resources during March, which is National Nutrition Month.

The Academy of Nutrition and Dietetics created the annual nutrition education and information campaign, which focuses on making informed food choices and developing sound eating and physical activity habits.

This year's theme, "Beyond the Table," addresses the farm-to-fork aspect of nutrition, from food production to distribution.

Featured meals on Wednesdays

Throughout March, a nutrition-packed, delicious meal will be featured each Wednesday in Rochester, Florida, Arizona, La Crosse, Mankato and Eau Claire. All other locations will feature a recipe one Wednesday of the month. Regional variations to the menu will be communicated at your location.

  • Week 1 — An Italian farro, lentil and arugula salad will be served cold, with fresh chopped basil, mint, parsley, grape tomatoes, slices of radish, pistachios and shaved parmesan cheese.

  • Week 2 — A harissa, carrot and broccoli hummus grain bowl will be served hot, with tri-colored quinoa.

  • Week 3 — A wild rice salad with baby garbanzo beans will be served cold, with sliced mushrooms, celery and dried cranberries.

  • Week 4 — A Cali bowl will be served hot, with grilled peppers and onions, tri-colored quinoa, sriracha honey garbanzo beans, fresh avocado and a spring salad mix.
